This tasting menu celebrates Costa Rica's terroir through the aromatic depth of Rosa Blanca Coffee, paired with endemic ingredients and contemporary culinary techniques.

Starters

Ceviche with Cold-Brew Coffee Leche de Tigre

Fresh local fish cured in a refined leche de Tigre of lime, cilantro, and sweet pepper, elevated with cold-brew coffee. Served with a crisp patacone (green plantain) and roasted sweet potato.

Pejivalle (Peach Palm) Tartare with Coffee-Infused Olive Oil and Trapiche Honey

Minced pejivalle combined with coffee-infused olive oil, cas (guava), artisanal cane honey, and culantro coyote (herbaceous native plant). Presented with marinated green papay.

Main Courses

Glazed Pork Belly with Coffee–Guava Reduction

Slow-braised pork belly lacquered with a deep reduction of coffee and guava, subtly accented with chilera, a Costa Rican mildly spicy Chile. Accompanied by a velvety ñampí (local tuber) purée with black garlic.

Heritage Chicken in Coffee & Dark Chocolate Mole

Chicken thighs braised in a layered mole-style sauce of coffee, cacao, and achiote oil. Served with camote (local sweet potato) purée finished with coconut milk.

Guanabana (Soursop) Flambé with Rosa Blanca Coffee Ice Cream & Pejivalle Ice Cream

Fresh guanabana flambéed with Costa Rican rum and a perfumed coffee reduction. Accompanied by an artisanal peach palm ice cream and a coffee ice cream.

Affogato with Rosa Blanca Coffee Espresso

Breakfast

Breakfast includes: juice of the day, seasonal fruit, and Cafe Rosa Blanca served in a French press.

Eggs Any Style

Two eggs any style served with ham, bacon, or chorizo (a mild Tico sausage), and served with a choice of homemade white, whole wheat toast, or homemade corn tortillas.

Omelet Any Style

Omelet with chorizo, mozzarella cheese, caramelized onion, sautéed cherry tomatoes, and served with a choice of homemade white, whole wheat toast, or corn tortillas.

“Tipico” Breakfast

Gallo Pinto, (rice and black beans) served with sautéed plantains, corn tortillas, scrambled eggs, and a sour cream garnish

Huevos a Caballo

Two eggs, tomato, onions, farmer's cheese, black beans, and chorizo, sandwiched between tortillas, lightly sautéed, served with fresh "pico de gallo" (a typical salsa)

Huevos al Cafetalero

Fried eggs, black beans, roasted tomato sauce a la ranchero, farmers cheese, fresh cilantro, all on a homemade tortilla

Tortilla Aliñada

A handmade tortilla with a mix of Bagaces, farmer's, and smoked cheeses, served with fresh sour cream

"Arepas del Tigre"

Costa Rican pancakes served with fresh tropical fruit, and your choice of mora preserves (local blackberry), or sugar cane syrup

Rosa Blanca French Toast

Accompanied by fresh tropical fruit and your choice of blackberry preserves or sugar cane syrup
